New to the site and just waving that hand to all. My handle stands for new kid on the block smoking with pride. Hope to do my first fattie this afternoon. One will include peppers stuffed with seafood boudin. The next will be a breakfast fattie that you slice and put on a english muffin with egg gravy topping it off.
 
Thanks for the tips. I have a habit of starting early so i am less likely to add the kitchen sink into the recipe. Being a truckdriver by trade and having a hard time finding good food on the road because there is no parking for my large rig i have a tendancy to over do it when i get to the grill. I like to cook with attitude because you never know who might stop by. Time in the kitchen is play time and when the results are good all is well. I hope to be able to post some pics that will get your appetites going. Thanks Beau
 
Venison stuffed with poblano pepper and seafood boudin. Crawfish and shrimp with parsley rice and a little heat. OMG, it was awesome. Will post pictures tomorrow, son's camera we are not used to it. Good night.
