Newbie smoker from AZ

    Hi there! Learning how to smoke great meat and fish with my new master built Bluetooth smart smoker. Aside from salmon my greatest desire is to make Montreal smoked meat! I grew up there and miss it a lot! Any advice???

    Welcome to the board! Where in AZ are you? Use the Search to look up your smoker and see how people use them.

    I've visited Eloy, in the Sonoran Desert, and if you want to nap with your back against a saguaro it's much more comfortable to use a pitbull as a cushion.

  4. Welcome to the site. It's my go to site for smoking. You are blessed to live in a great state for smoking. Make it an adventue to travel around and find your smoking supplies. Down in Eloy where BlueWhisper said he went is a pecan grove, and in the desert outside the groves there are piles of trimings from the pecan grove. There are lots of other woods around the state that also work well in the smoker. Just make sure you remove the bark as much as possible, and cut it into chunks. Most electric smokers require very little wood, so small chuck work best, like 1 to 3 inch.

    The best words I can give any new Smoker is learn about blue smoke. It's harder to do with an electric, but it can be done. The big difference with electric heat is that you will not see much of a smoke ring on anything. It's just the way it is in electric box smokers.

    One more tip. Always fill the smoker. If you are going to take the time, then make it pay. Any extra space on my racks gets Johnsonville brats, hot dogs, turkey dogs, or kibasa. The brats are one of my most favorite things now. I cook the brats in the wrappers, and peel them when they're done. A good roll, some grilled onions, maybe some cheedar, and mustard...MMM!
