Hi

I'm completely new to smoking. At the moment I am doing a lot of reading before diving into it.

Like all my other projects I am planning to build my smoker from scratch. My home brewery started the same way and it actually turned in to a business. My still also, but just for personal use as that is legal here in South Africa.

Planning to focus on bacon to start and then pastrami. With family in Namibia and easy access to a variety of game meat, I hope to broaden my scope and try a few interesting things in the future.

Will post if the results are worth sharing.

Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to to something you put on a plate to eat then someone here has probably done it. Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with there opinion on the subject.
If you decide to build that new smoker you may want to post your plans in the smoker builds section of the forum. There are a lot of very talented builders that are more than willing to lend a hand to ensure your final product will perform correctly. If I were going to build one from scratch that is what I would do.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...

Just got to share this...

In South Africa we don't have a big smoking culture and I have been struggling to get my hands on Prague salt/Cure 1/sodium nitrite.

Till today... From the only supplier that I could find, I bought 1kg for R23. That is 2 pounds for $2...
