Newbie from Texas!

    Hi everyone I'm Mims and I just unexpectedly bought my brothers Brinkman last weekend. I've been reading all the post and Jim's info for a while because @64 yrs young I wanted to start a new hobby..smoking yummies! Thanks for all the info I've gotten from posts.Jumped right in with my first brisket today and some chicken legs for a quicker treat for my sons to test ;) Its been fun hanging with the smoker today..all seems well so far and i'll update later. Looking forward to the community as i have time!
    Do have a question..seems flies have come buzzing around the area today any ideas?

    Well just pulled the chicken legs off and hubby and sons quickly scarfed them up with lots of mmmmms! Only suggestion to self is next time pull legs off after about 1 1/2 hrs. Outer edges little chewy in places. Brisket still going with a consistent 275 temp.
    Still have some flies waiting for their bounty! Ideas?

    Welcome to the site Mims!  Glad you joined us.  Did you prep the brisket and chicken outside?  I've had flies swarm over the brisket/rib/chicken packaging in the trash can, during my smoke.

    Whenever I do any prep outside I place a black plastic bag (the kind we get in rolls for lining refuse bins) on the table top, underneath the food prep boards. When the prep is completed the boards are washed and the bag, with any food splashes, gets thrown straight in the bin.
