Hey all! In new to the world of smoking meat. I've been grilling for years but this is all new to me. I have a hand me down Brinkman Gourmet green barrel smoker. I have smoked a few racks of ribs on it and the first ones turned out great. 2nd ones not so great. I an still learning on how to keep the temp steady on my smoker since there is no way to regulate it with vents.so it seems to all be in how much charcoal you start out with. But I'm sure I will learn as I go. Until I get my pellet smoker one of these years. :yahoo:
As we speak I am smoking my first Brisket. I can't wait to see how it turns out.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
