Hi from Indiana. I've been smoking for a while with a gas Brinkman. I upgraded to a Cookshack Americue last year. Since I'm now retired, I've been smoking a lot more especially in the winter when I can't grill. I've been using hickory and am going to try other types of wood. The only things that we haven't smoked yet are brisket and salmon. Didn't try brisket because of the cost. Might try some cold smoking cheese. Having a lot of fun. Doing bbacks today and of turkey next week for thanksgiving. There is a lot of good information on this forum.
