Remember no billowing smoke thin and blue. that was my first mistake with my first off set smoke...lol...and the family still managed to eat it...with a lot of bbq sauce..welcome to SMF and good luck.

It will be for sure but you found the place to get you smokin like a professional in no time...I am surprised the fire department didn't get called on my first one..lmao it blew out so much smoke that it looked like a nuclear power plant on a cold winters morning.

thanks everyone...i think i am going to try and smoke some tri tip for the game tonight...

Welcome Keith, and congrats on the new (to you) rig! Looks like you made a great find. Your question about thermometers: There is an entire thread section dedicated to thermos. I would suggest you browse it before you buy. I mostly use digital thermos. I have a couple of Taylors and a Maverick ET-73. They are a must IMHO. Good luck and happy smokin'!

found this for 3.99 a bag... http://www.patiodaddiobbq.com/2009/0...-charcoal.html soaking the pieces of wood in water as we speak
then also bought a bag of the cowboy charcoal for 6.99...smoking a beef and a pork tri tip...party starts in an hour...bring your own beer...and also a new temp gauge for the lid of the smoker and ordered one for the cooking surface...yes i know about the drop in degrees from the lid to the grates...i am a bit nervous...hehehe...

anyone think the ravens are going to tear quinn limb from limb?...i told a friend i envisioned a scene from national G...when two lions fight over a kill...one has the rump and the other has the head...poor brady quinn...cant wait for the smoked meat and then some NFL carnage...

hey guys...thanks for all the info...i like the attitude toward newbies...i used to be a stickburner (if by this you mean a BBQ grill person) but i got a deal on this and have always wanted to try it...i like to think i was pretty good at bbq grilling...i also fancy myself a decent cook...hell...i'm single and 36...no one is going to cook for me :)

i'm hooked...the tri tip and the pork roast came out perfect...once you get the fire dialed in you're gold...
