New to the forum from South Texas

    Good afternoon, I've been lurking for awhile and finally decided to join. My name is Stephen, I'm 48 from Texas but decided to go by Brute on here (Brute was my college football nickname). I've been grilling, bbq'ing and smoking meats since my teens. My love for this started as a child helping my grandpa, dad and uncles cook some great meats on the weekends. I have 1 custom pit, 1 grill I made out of an old tractor rim, 1 MES electric smoker with "cold smoker attachment", 1 gas grill and 1 4'x4'x5' wood pit I use for smoking that I built myself. My wife thinks I'm a total redneck for having so many outdoor cookers! I'll post pics of them later when I get a chance. 😀 My favorite meats to smoke are: briskets, pork butts and shoulder clods. I'm a professional safety engineer and love that as much as I love cooking outdoors. So that's me in a nutshell.... Glad to be a part of this forum!

    Hey ibbones, I'm about 2 and a 1/2 hours away from you (Castroville, just west of San Antonio). Thanks for the welcome. I have been doing it for awhile and still have not mastered the finished products but have never had any complaints. As a South Texan, have you ever grilled bacon wrapped dove breasts with cream cheese and jalapeño? Oh boy, they are great..... Also, have you ever heard of Chupacabra Rub? They sell it at some H-E-B's. Man if you haven't used it and you can find it you ought to try it. It's a gourmet season-all. Briskets at H-E-B are $1.97 this week until Tuesday. I had to pass on one cause they had just too much fat. Anyway, I can talk forever... Lol Again, thanks for the welcome!

    Hey Brute and ibbones, another part-time Texan here. I'm way out West in the Ft. Hancock area. Use to live in Laredo and spent a few years in Houston. I say part time because I'm up in the NE right now and just get to Texas when I can get away. I have a small ranch just North of Ft. Hancock off 148 and spend about a month or two every year there. Mostly to hunt mule deer and pig. Great bunch of guys here. Very helpful so you'll enjoy your stay. Welcome.

    Brute, welcome to SMF!  As someone who learned one of my careers in Kingsville and fell in love with my wife of 35 years in South Texas, I have a soft spot in my heart for the area.  Glad you are here and smoking up the skies!

    Castroville...yeah, been through there many times.  Motorcycle rider and all.  

    No to the dove thing. Done many japs with cream cheese and bacon.  My wife has a hard time eating something that does not come with a label on it.  No hunting or fishing for me.

     The Chupacabre rub is great but out HEB does not keep it all the time.  I can find it in Cuero (where the real Chupacabra was found) in some of the little shops around the town.

    Ft Hancock, thats off the beaten path.  Sure is pretty there.  It's been about two years since I have been that way.  Really need to get back and watch the sunset.
