Greetings from Fort Worth. Just bought an MES 40". Doing my first smoke today and by first I mean first on ANY smoker. Doing a 4 lb Boston Butt and 2 racks of Baby Back ribs. Dry rubbed with brown sugar, white sugar, salt, coarse black pepper, paprika, cayenne, chili powder, garlic powder, onion powder. Smoking with a mix of 70/30 Hickory/Pecan. Wish me luck.
