I feel like I am already part of the forum!

I decided to smoke a turkey for Thanksgiving a few months ago.  I went on craigslist and bought a used brinksman electric smoke for $25. Not wanting to ruin thanksgiving, I decided to do a test run.  I bought a turkey, thawed it out, and tossed it on the smoker.  It was, bar none, the best turkey I had ever eaten.  No gravy needed.  I went ahead and bought a chest freezer and a half dozen turkeys with my Christmas discount.  I've got one left.  I've smoked 5 pork butts, some goat chunks(jerky, lol), and a half dozen turkeys.  I have spent a lot of time reading through google search and this was the forum I saw the most.  I have read many of the threads over and over every time I smoke a butt.

I am definitely enjoying smoking meats, and I love my electric smoker.  I added a temp gauge to the lid, and I bought a wireless probe with pager for the meat.  I have a grill in the backyard that has been in my family for 20 years.  I haven't used it in 5.  It is big enough for an entire pig and is made out of 1/4" iron.  Heavy as hell!  Took 4 people to put it where it is at, and I buried the base in the ground a little because the lid probably weighs 300 pounds and it made it easier to lift.  I really need to put a pulley and weights on the back because it is a beast to open the lid.  I have been eying it, and I think I would like to turn it into a big electric or propane smoker. 

My other hobbies include brewing beer and restoring guns.  I have an extensive gun collection, and a 4 tap kegerator.

I just finished smoking a couple butts with mexican style spices to eat in tacos and I had a couple questions, but I figured that it would be rude to not introduce myself first!
