I just bought a Chargriller Kamado Kooker. I have read Jeffs Email Course on Smoking. I just tried my first ribs and I could not get the temp down and kept burning ribs. I finally took the meat off and let the fire start to finally run down. Then I put them back on. I sure have to learn how to regulate the heat baffles. Maybe I used too much lump charcoal. Also may need the smoking stone and add a water pan.
