new to charcoal smoking and mini-WSM

    I've been using a vertical propane smoker for about a year and a half, definitly getting some good Q out of it, but i've been interested in smoking with charcoal and upgrading at the same time. I found there are quite a few cheap ways to do it.

    So first i was looking into a UDS. the builds are awesome, and it looks like it will work great for doing whole briskets (my current smoker isn't wide enough, so i have to cut them in half, ribs too), and Big smokes.

    Then i was pointed to a site about the mini-WSM, which looks like another great idea, and cheap too. What i was thinking if i go this route would be to make a UDS style charcoal box (bottom grate with 4 bolts to raise it up), then have one of the flowerpot deflecters above that, and then, if it will fit, two grates for food. Does that sound like a good idea? I would think with the charcoal box i could keep smokes going longer. 

    So i'm wondering would the mini-WSM be a good starting point into smoking with charcoal? Would smoking in a UDS be pretty much just the same?

    Although the mini-WSM looks great, i would probably have to build a UDS anyway that i could use to do big smokes, no?

    One thing you will find out quick is your smoker is never big enough . I have had two grates on my UDS full and my SFB Smoker full and my ECB going at same time. My point is,
    Go with the smoker that going to have enough room to get the job done.
    Hate standing there looking at full smoker and still got more to go in it .
    Just my 2cent on it .

    I have a mini wsm and love it. I use a colander for a charcoal basket, but intend to make an expanded metal one using the charcoal grate as the bottom. They're small, yes, but hold enough food on 2 racks to feed a good sized group. I chose this over a UDS as we' don't have any outdoor space in our apartment. so needed something portable we could take elsewhere to smoke. The other benefit of the mini is the relative ease with which it can be built, and the low cost.

    I didn't know what a "mini WSM" was so i started checking into it.
    Now that a cool little smoker ! Going to read up on it a little more
    And build me one of these little guys .:yahoo:

I did a mini wsm recently just as a fun project but the little guy really does a great job.  Just smoked 8# of cheese using the AMNS.  Got a butt ready to smoke tomorrow.  Mine has two shelves and I replaced a terra cotta saucer with a cast iron pan which I cut the handle off.  Its great.[​IMG]

    I think i'm going to build one of these, and then when i can get my hands on a 55 gallon drum, i'm going to build a UDS.

    And all of this research and reading that i'm doing it getting me very psyched to start smoking with charcoal on one of these REAL smokers, as opposed to the propane vertical one that i'm using now.
