New smoker take two...

So here we go again...I got the weld fixed on my new smoker, applied several coats of high temp paint on the firebox, and put a grate in the firebox so it wouldn't choke itself out...time to try another butt!!!

Winn-Dixie was having a sale on butts so I picked up two 10lbers and headed to the house with a smile...and then when I got there my wife told me that was too much meat...and now one is in the freezer...dag-nabit!  It's ok, i'll have that one later!

Prepared the butt Friday and the plan was to wake up at 5:30 and some how make a ten pound butt ready by seven...and at around an hour and a half per pound, that didn't seem very logical...

Then it was into the fridge for the night.

Went to bed at 10:15 and for some reason woke up at two...AWESOME!!!  That gave me an hour to watch an episode of Dexter and then get outside and start things in motion.  So three o'clock, upper thirties...great!  I started with a chimney of lump and was off to the races.  On a side note, I bought a 40lb bag of lump that unfortunately had about six big pieces and the rest were so small that they were falling through the rings in my chimney...not good on the driveway!!!  So I went to Home Depot and got a sheet of 1/2 X 1/2 steel to see if I could put it on top of the existing rings...and here is how it went...




I'll be honest, I wasn't sure if it would work or not, but it did and I may or may not have done a little dance in the garage!

Ok, back to the smoke...at 4:50 this morning, I put the butt on the grill and...well you know what happens when you fire up the grill...Killer Whale is a cream ale brewed at a local brewery here in Jax...pretty good!!!


So long story even longer, I kept the temp between 225 and 275...dipped below 200 once (green wood) and pushed up to 300 one time (when I got seasoned wood again)...I pulled it off at five...several hours before it should have been ready, and it was the BOMB!!!  So good!!!

And here she is...



Fed four hungry adults and had a ton leftover...this week's lunches are going to be great!!!
