Meat Mopper
I hate it, but in this day and age I'd never put something called "fatty sliders" on a menu. Some numbskull would decide it was offensive.
ABTs are good but in a restaurant setting they might be tough to turn around quickly as an on-demand appetizer. There's also the question of the labor cost involved and the time used in the smoker vs. what people would be willing to pay for them.
My suggestions:
Smoked Sausage link, maybe served with a chunk of cheddar.
BBQ Nachos, tortilla chips, pulled pork, cheese, jalapenos, maybe some slaw, sauce
Brunswick Stew (great way to use extra meats)
Redneck Lasagna (brunswick stew over mac&cheese, sometimes wtih a little more pulled pork added)
