Lawman from Wichita Kansas. Just bought a Charbroil double-door smoker with off-set fire box and have gotten my feet wet with smoking a couple of chickens, then did the bbq thing with some leg quarters. Eager to explore the world of smoking and bbq. Any suggestions on starting out will be appreciated.
 
Hi Lawman, I am also new here and have gotten lots of help. I just got the single door Char-broil smoker and have used it twice so far. Had a few problems but the folks here helped me out did some ribs last week and they came out ok but I'm getting the hang of it. I'm not the "offical welcome person" but, Welcome to the board and have fun.

Welcome, Lawman glad you found your way to SMF. Check out tulsajeff's Smoking Basics eCourse. It has a lot of good info to get you started. Another thing to do is check out the different forums and see what others have done and how they did it. Some of the topic even have pictures that will whet your appeitite.

If you have any questions on equipment or "how to", just give us a shout and someone will give you a hand.

Welcome lawman. You've found a great site that I'm sure you'll enjoy. If you're a fan of chicken, or what my Dad affecionatly calls yardbird, you should try a beer-can chicken. They come out real juicy and flavorful. In the poultry section you'll find two or three different threads on how everyone here does theirs.
