    From illinois. Fairly new to smoking. This forum is awesome though lots of great advice. Got a new smoker for Christmas. Want to do a lot of smokeing.

    my first attempt at a brisket. Seems dry. I pulled it of smoker at 194. Wrapped it in a cooler for a hour. It that why it was dry? I pull it to early? Thats what inwas thinking.

    Iprobed it 3 hrs in. IT was 154.is this the right place to probe it?
