Jeff from Texas here, I'm enjoying the different topics so far. Excited to learn and discuss! I'll try to smoke anything once. So far brisket is my best and favorite. First time smoking ribs they were fall off the bone but I didn't like the sweet/sugary flavor I gave it even though others did. I'll be trying this weekend, for the first time, a baby 15-20lb hog I shot. We'll see how that goes.  I have the type of smoker with the firebox on the side. I'm definitely liking my smoker, but for my wedding I will be using the type of smoker with the fire under it (its at a city park, its like 10 smokers lined up made out of brick and steel plate for the doors) i'll most likely start a thread else where to get advice on using that type. Anyways, I'm looking forward to learning a lot!

The hog turned out great! Just smoked another one for thanksgiving! As long with my first smoked turkey that turned out just as good!
