So, I've been watching BBQ Pitmasters and all those other shows (Reichman on PBS) for years and years and years. So a lot of stuff is already ingrained in my noggin.

I was driving through and stopped at this BBQ place a month ago on the way home. Had smokers in the parking lot, went in got their half smoked chicken and brisket... and that was it. I had the bug.

I did some minor research and wound up with a Smokey Mountain two drawer smoker for $240 shipped.

Slapped that together on Saturday, took about twenty minutes or so.

Ran out to the store and got some chicken quarters and brined them waiting for sunrise the next day. I rinsed and rubbed those quarters. Dropped some red-oak and apple in the smoker box. Spritz occasionally. 3-1/2 hours later.... YUM!


Also my brother brought over a pork butt and that stayed in for another couple hours and we made pulled-pork sandwiches.

I was expecting some sorta failure but happy with the results.

I am taking time to go through all the forum posts now...
 
Forgot to add, I took them out around 155 and stuck them in the over just to crisp up the skin.
