Hello All!  New to this great forum and I appreciate all the stuff I gleaned/learned in the last month or so. Had a hankering to smoke something since I saw the guy at the marina smoking butts on a Pitt's Spitt that was twenty years old. Boy, them butts looked good! So, started checking it out and bought the WSM 18 today. Got the Maverick 733 from Amazon. It will be here Friday. Funny, I was so excited a week ago, that I made the BDSE sauce one day, just to get ready! lol!  Didn't even have a smoker!  Thanks to PGSmoker64 for that recipe. I didn't really get it until I tasted that sauce and now I see how you can tweak a sauce to your likes. Before that, the recipes were just words on a page. So, I been playing with the temp control today. Started at 10am, let it blast off for 2 hrs and then started playing with the vents. Right now, I got the temp at 225 using the thermometer it came with. The info here has really helped and I feel confident that I'll be "mokin this weekend. Gonna do a big chicken tomorrow, to help with seasoning. Sorry for being so long winded but, I am excited. I love smoked meat! Gonna get a sausage recipe to try. Sausage will be the death of me, clogged arteries and all. Got some venison in the freezer, might give that a shot. I grill on a Weber Genesis, gas grill 2-3 times a week. It's easy, I know it ain't charcoal. Wonder what a smoked ribeye tastes like?  Thanks again and I look forward to learning more from you guys and gals. Sincerely, Kevin
