hey im stephen. grew up in texas and now im sationed out in hawaii now so i figured id give my hand at smoking since no real local bbq joints just sitting on the side of the road. im just using a Brinkmann 810-5301-C nothing fancy and so far did a brisket came out pretty good but a little dry and a pork shoulder for pulled pork and that was pretty much a failure. been pulled into doing a ham and turkey for the holidays here but not really sure where to start other then what i can find online. any advice would be great.
