Just joined because my newer Smoker is in route by Fed Ex and can't wait for it to get here. Not going to retire my charcoal units but I want to try the Smoke-it Model 3. Always have had trouble with the wind here in Nebraska and try to control the heat, you know what I mean. 

If you have any ideas, please advise because I have many family members who love it when Dad cooks.

Welcome aboard, Jim! Glad you joined us. You've found a great place to learn and share ideas. Lots of friendly and knowledgeable folks here who enjoy helping one another. Good luck with that new SI-3, I've heard good things about those rigs.  And just ask when you need help and you'll get plenty.
 
Just notified it's on the truck from Ohio. Pretty cold here this week but when it arrives, I'll run it through the start up seasoning. There's a good butcher shop west of me so I'll stop and purchase some thick baby-backs for the first good smoke.
