Hello every one.  I have been making my own venison summer  sausage, snack sticks, bacon and etc.  and I seen your forum and wanted to join in.  I've been smoking meats for about 15 years off and on and started out with a little chief smoker and just finished making a home made version ( turned out really nice ) has a 1500 watt heating element adjustable thermostat and etc.

I have a question to see if I can get an answer to, when I go to make snack sticks I use collagen casing and when they are done it seems like the casing just peels right off and does not adhere to the meat itself.     Any suggestions would be greatly appreciated.

I think most of the guys use fibrous casings for SS.
