Hello all, I am Joe from NorCal. I have been Grilling for years and was given a Jade Range water smoker a few years ago. I finally got it cleaned up and modified to burn charcoal and wood. Smoked chicken and ribs a few weeks ago and there is no going back, I am a convert. Found the forum while trying to find more info on meat smoking, jackpot. I am looking forward to learning more about smoking, equipment and maybe hooking up with some California cookers.
