Hello,
Just joined but I've been lurking for a while, getting recipies and tips.
Learned how to make a "fattie" from this site. They come out great.
Just recieved a Masterbuilt Smoker for my B'day. Tried my first real smoke today. Pork butt, 4.5lbs at 225D. Darn thing has been on 10 hrs and still not to 200. I foiled at 180 which took 8 hrs. I'm guess my thermostat is reading a little low. Like I said I'm new to smoking but have been grilling for a while.

Be patient. As long as you have a decent thermometer, you should trust it.
 
Welcome to SMF from another Floridian glad you joined us. Congrats on the new smoker. Hang in there with that butt and it will all be worth it when you start eating it.
 
welcome whisky-saw u in chat but u left before I got in-ya hang in there-my butts been on for 8hrs now and 165-hope it gets done before bedtime.
 
Welcome to SMF. Yeah, butts sometimes take a long time. Don't be tempted to turn up the heat though. When it's done stalling, the temp will rise quickly.
 
Not that Im getting impatient or anything....
kinda thought 4.5lbs wouldn't take 12 hrs...!
I guess the experience is worth it. Thanks for all the encouragement!

Ha ha , yeah thats exactly what I thought when I did my first butt. My Wife and my in laws saw that as confirmation that I had gone truly nuts. The butt took forever to get over its snit of a stall and finally get after it. 11 hours later it was done and rested in the cooler. We ate late but feeding it to them changed their minds in a big hurry. Now as soon as I get up in the morning either My wife or my sister in law want to know if I have something started on the smoker yet. Its one of the joys of owning a duplex with your in laws renting the other half.

Thanks for the encouragement. I'm getting a bit tired, damn thing stalled at 180 and it still has to go in the cooler for an hour. My girlfriend got me the smoker for my birthday and thinks I'm nuts to wait up for it to finish.
 
When shes eating that pork she'll know exactly why you took your time and did it right. With butts and briskets I kick the heat up to 235-250 and it helps go a little faster. Have you checked out the finishing sauce yet? Its a sticky in the pork section try some it takes it to a whole new level heck try some with and some without and see what you think.
 
Welcome from another Fla newbie.. My first butt took 18 hours !!!, Of course that was b4 i found out that my smokers temp gauge was 30 degrees off

I'm thinking my temp guage is off also. I'm going to get an oven themometer this week and test her out.
