Hello Everybody,

My name is Lance and I am new to the forums.  I just bought a MES 30 and thought I would get in on the wealth of knowledge contained here.  I have been grilling and smoking on my Charcoal Weber for a long time, but keeping temperatures low enough to smoke ribs and such can be a pain so that is why I got the MES.  Gonna burn it in this weekend!

I live in southern California, but originally hail from Stevens Point, WI.  I will end by saying that I love meat and beer.

 to SMF!!! Glad you found us! You will find there are a lot of MES users here and they love to share advice on their smokers. I read a lot of good stuff about the MES so I'm sure you are going to love it
 
Hello Lance and welcome to SMF!

I have an MES 40 and love it. I learned MES cabinet temps and set temps are not the same. The cabinet temp on mine runs anywhere from 5* to 20* cooler than what I have set it for. The other thing is at lower temps, less than 200*, it doesn't make much if any smoke. Do yourself a favor and check out the A-MAZE-N smoker products. They are super with the MES for cold smoking and long smokes.
