New guy checking in

  1. Well, just joined up here, looking for some inspiration and a way to kick my smoking up a notch. Until I started looking around here, I THOUGHT I was doing a decent 'low and slow'... now I see I might as well have been slapping pork butts on the grill! [​IMG] My new friend will be named 'minion'.

    About me, I'm a husband and father (of three), serving in the US Army here in the 3rd Infantry division. Had a couple of smokers previously, one of the pitmaster types with the firebox on the side, and a brinkmann "bullet-type" cry-and-cuss charcoal smoker. Have another brinkmann now, and gonna start working on the mods in the morning.

    Spent about 15 months on a "business trip" as my wife likes to call it, and dreamed of thin blue smoke almost constantly. I'da smoked a camel if I coulda got my hands on one. I firmly believe that we could solve this whole middle east problem with a few pounds of smoked pork (and some laser guided munitions)

  16. I am new to all this smokin business. I got a used charbroil H2O Electric Smoker. if this works out well for me I will be investing in a better smoker. I some questions and could use some good advice.

    1. Does anyone use a pan in the bottom over the electric coil for thier wood? possibly cast iron?
    2. Do I need to get some lava rocks to help insulate it?

    hey guys/gals, you have quite the community going here, I have learned alot already with just the little bit I have spent here.
    From Eastern Oregon, grilled alot with moderate success, but wanted to move into smoking/slow cooking to expand my palette.
    I have never cooked with charcoal before my current smoker.

    Have a question though.
    I have a Brinkmann cylinder charcoal smoker/grill my lovely wife got me for Christmas, I have only tried it once, heres why:
    Chicken smelled/tasted like lighter fluid, I think I have remedied part of that with a chimney starter, but that leads into the next part of my problem.
    The coals cool down/go out when the ash starts to form, when I need to cook for a few hours or longer, this doesnt keep the temp high enough, so I had to keep adding coal and lighting it to keep heat up. I know I shouldnt have to do this, but I'm not sure how to keep the coals I have hot enough.
    Does anyone have experience with this smoker to help?

    smokin_momma and Teamfatman76: If I may make a suggestion...why not start a new thread with your introduction? Looks like the welcome wagon around here is right friendly, and I'd hate them to miss a chance to greet you personally!
