New from VA (Varina to be exact) Originally from Louisiana

  1. So I've been on here for about a month just READING and READING and READING. Anyways I've got big plans and I'm just educating myself at the moment. I grew up in Louisiana and worked for a BBQ place down there as my first job (15 years ago). It's since closed down and I really wanna recreate (but with my own twist) that place and food that I remember so well. Hardest thing is matching that sauce based on memory alone. 

    Anyhow, I'm sourcing material for a RF build (250 propane tank based) Trailer and hoping with the hours of reading on here plus questions I'm sure everyone here will answer, I'll be able to fab up something nice. 

    I wanna start off easing myself back in by doing private parties and catering for weddings, etc. 

    Long Term goal is my own place but baby steps for now. Still have TONS of prep and trial and error just in recipes and techniques but I'm willing to put in the work. 

    I'm gonna state an opinion that is just an opinion and some may not like but I have yet to find ANY bbq in Virginia that I personally liked enough to crave. I've had OK bbq. (and I'm not saying I can do better) And sure they are successful but I know I've had better. Can't pinpoint what's missing but I've been all over the state. Maybe it's because I'm not a huge fan of Carolina Style which is so prevalent here. Anyways, I'm by no means putting any place's bbq down, I'm just always comparing to what I loved so much back home. Hope no one takes this paragraph wrong.

    Going to a competition (not participating just EATING) next month so maybe I'll get closer to finding what I like! 

    Anyways, prepare for my questions, my input, and my progress. Look forward to sharing and learning with everyone here.

  4. Glad you joined the group. The search bar at the top of any page is your best friend.
    About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
    and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
    We are all smoke junkies here and we have to get our fix. If you have questions
    Post it and you will probably get 10 replies with 11 different answers. That is
    because their are so many different ways to make great Q...
