I've been running my ECB smoker for about 5-6 years now, mostly brisket, ribs (pork), and butts.  It got to be too small so I recently built a UDS that I"m loving.  The nice thing is that I can use the ECB electrical element or the charcoal pan for the UDS.  I've only smoked some leg quarters on the UDS, but they turned out awesome.  Even my wife liked them and she won't eat anything but boneless chicken breast.

Hobbies also include planted fish tanks, its all about the plants, not the fish, BBQ, and bacon.  I love bacon, bacon makes the world a good place to be.  I even make soap out of my extra bacon grease so I can shower each day in bacon. . .  Too bad it doesn't smell like bacon

Here to learn more on the art of smoking, I want to do some cold smoking, bacon, of course, sausage, hot dogs, cheese, fish, etc.  Looking forward to it.
