Hey everyone! The names Daniel and I currently live in Jacksonville, NC. I love grilling and want to get into smoking! I have a Char-griller and I am looking at getting the side-box so I can start smoking. Any tips about how to smoke with a side-box would be greatly appreciated. I think the biggest questions I have are what are the best cooking temps for meat, to use wood chips or not, and placement of the meat and water pan. Been poking around the forums and have found a lot of good tips!! Can't wait to learn and read more!!
