New member here from Eastern NC, in the Wilson-Wayne county area. While I love grilling, and will grill just about anything, I am brand new to smoking. I have been researching smokers and reading post on this site for a while now, and decided to order a smoker and give it a try. After reading several recommendations on this site about the Char-broil Double Chef, I decided to order one (I really wanted a Weber, but I will save that for later). Well, I ordered it on Monday, and it was on my doorstep today when I got home from work. The box is in terrible shape and has a lot of tape on it- I hope the smoker is in better condition. This is a great site, and I'll be posting more later. Thanks

Thanks to all for the warm welcome. The smoker actually looked great once I got inside the box- everything was wrapped, supported, and in place. I now have it assembled and ready for my first smoke. I just have to now decide what to smoke first. I'm leaning toward chicken- since it is the least expensive in case it doesn't turn out so good.
 
Welcome to SMF glad you decided to join us. Congrats on the new smoker glad is was just the box that was damaged. Before you smoke something be sure to clean it out and season the smoker. Chicken is a good first smoke have fun and happy smoking
 
First off welcome Acw to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

Yes, I have been going to the Nahunta Pork Center for a number of years. I actually go by them everyday on my way to work, and it is a great place. I have fired the smoker, rubbed it down with vegatable oil, and have it seasoning right now. It has been maintaining a steady 300-325 for the past 2 hours, and shows no sign of slowing down anytime soon. Not sure how long I should let it go- any suggestions? The owners manual states to season it for at least 2 hours, which I am past.
