Hello everyone, I'm new to smoking. I have been an avid amateur cook for several years, but have not done much in the smoking world. I went to Mesquite last year and happened to be there during a smoking contest and fell in love with the endless uses of a smoker. I have a Smoky Mountain Gas Smoker that I originally purchased to smoke salmon. Living in Alaska we tend to have more salmon than we know what to do with and smoking is a great way to make it last and to take it with us camping and fishing. I just started out trying a few racks of Ribs and tomorrow I am going to try my hand at a pork shoulder. I look forward to learning from all of you and to sharing what I learn with each of you. The biggest problem I have with smoking in Alaska is the season is short. I can never get my smoker up to temp in the winter. I wrapped it in a blanket one year, but that didn't go over well with my wife, as the blanket was pretty much ruined after that. If any of you have found a way to extend the season into the winter months I would love your input.
