I am finally in the process or converting my freezer to a smoker.

The question I have is about the inside. It is all metal I verified with a magnet. It is also painted white, would I need to sand this all off or could I just use heat resistant paint over it?

Also with the insulation most of it us fiberglass with a little foam near the door. Do I need to remove this insulation?
 
do not paint or remove the coating inside. As Dave said, its porcelain coated steel. same as the inside of your oven. If there is foam in the insulation then replace it. Foam is no good for the heat. Use Roxul or fiberglass insulation. Roxul is recommended.
