Oh man, is that a loaded question. I know this seems like a cop-out, but there are all kinds of great things to put in a fattie. My suggetion is to go to the fattie area and just start looking. Every once in a while you'll run across something that somebody did that they didn't like. But I'd saythat 99% of what I see on here, the chef says he/she liked it.

Other than that my only suggestion would be to think to yourself, "what sounds like it would taste good with sausage?" then go from there. And it doesn't have to be sausage either. That's just the more traditonal method.

The pizza fattie is a pretty good one that a lot of people try first

Then there's more breakfast style like this pancake and apple version

or the egg, cheese and chorizo fattie

that one has a nice rolling tutorial to help get you started

Then here is one using Italian sausage

Like they all ^^^^^^ said. A Fattie is just a meathod of creating a wonderful hunk of goodness. You fill it with anything and everything you can think of. Dude gave you some of the most popular fillings. But by no means says you have to fill it with those ideas. Remember:
One Cooked is One Hooked

Welcome to the site OHIObrisket.
Dude gave you some links to some top favorite fatties but as others have said most anything you love can be done.
One of my personal favorites I have done was nothing more than a chub of (JD bold I think) sausage with minced smoked garlic mixed with the meat, it was great.
Another favorite of mine is a form of Armadillo Eggs, pepper shooters (cherry pepper stuffed with provolone and proscuitto) wrapped in a ball of sausage and smoked.

best thing to do is just do it!

i'd say to start with a simple one. just get a chub of sausage and some cheddar cheese and roll it up, put some rub on it (slather it with mustard first, if you want to help make a better bark) and smoke it. something as simple as that is great, and from there you will get comfortable with the concept and stretch your wings a bit.

Is this a trick question???

My personal favorite is a Mexican Fattie
Ground Beef w/ mexican cheese blend, avocado, tomatoes, red onion, salsa, four seasons italian dressing and little fire roasted habenro sauce for heat.

Yes -use the venison sausage. I have done it in the past with no problems. My filler was bacon, swiss cheese, mushrooms, and a sauce that included Peter Luger Sauce (steak sauce from a place in Brooklyn, NY), teryaki sauce, and worshtishere and some chopped garlic. It held together great with the bacon weave.

Welcome to the SMF. Glad you joined and look forward to hear back from you regarding all the great fattie recipes that have already been shared!
