I've been busy recently and haven't had a chance to smoke anything (except some chicken thighs which I pulled and used mustard sauce to make perfect. awesome). I stopped by the butcher shop while I was out today because I couldn't resist my smoker any longer! I've rubbed my ribs down and will use 3-2-1 as these are spares which I find to be generally less tender than baby backs. I trimmed them, so have some skirt meat to keep me smiling while I'm waiting.

I'm also making some baked beans. I think they're similar to Dutch's, but I'm going to add some brown sugar, a cut up apple and a half fatty that I smoked with the chicken. These will cook below the ribs which I think is in accordance with Dutch's method.

Anyhow, I was excited to get a good smoke going and wanted to put something up. I'm going to use pecan tomorrow I think. I find it similar to hickory, if not a bit smaller, and it's good.

If I can figure out how to post pictures since I've already exceeded my 500K limit, I'll post some pictures tomorrow.
 
Thanks meowey. I have been using snapfish, but when I try to use code in the pages, I don't get the image, rather the code prints on the screen. I tried last in the ABT thread and could never succeed. I guess I'm just not smart enough. :-(

The ribs have been on for about 1.5 hrs now and things are going well. The rain is cooling me down a bit, but I'm getting good smoke still. It should be a good smoke!
 
I smoked some baby backs last night. I found ribs on sale for buy 1 get 2 free. I got six slabs for $20. Ribs with skillet fried corn, baked rice and garlic bread. Yumm Yumm.

It should work. That's how I usually do it. I have an old web site that I really don't update anymore. I just use it for storage space.

Maybe it's snapfish that's the problem. I'll try another hosting site. I used theUBB code in the other page, but no luck.
