I've been busy recently and haven't had a chance to smoke anything (except some chicken thighs which I pulled and used mustard sauce to make perfect. awesome). I stopped by the butcher shop while I was out today because I couldn't resist my smoker any longer! I've rubbed my ribs down and will use 3-2-1 as these are spares which I find to be generally less tender than baby backs. I trimmed them, so have some skirt meat to keep me smiling while I'm waiting. I'm also making some baked beans. I think they're similar to Dutch's, but I'm going to add some brown sugar, a cut up apple and a half fatty that I smoked with the chicken. These will cook below the ribs which I think is in accordance with Dutch's method. Anyhow, I was excited to get a good smoke going and wanted to put something up. I'm going to use pecan tomorrow I think. I find it similar to hickory, if not a bit smaller, and it's good. If I can figure out how to post pictures since I've already exceeded my 500K limit, I'll post some pictures tomorrow.
