Need pointers... First Wild Turkey.

  1. A friend gave me the legs and breast from his Wild Turkey to smoke for him and i have a couple questions... Wednesday night i put it in the Slaughterhouse brine... Should i take them out tonight and rinse and put in fridge or keep in brine until i smoke them tomorrow?  The skin has been removed from both legs and breast so i plan on wrapping them with bacon, good idea or not? 

    I also defrosted a 12lb whole turkey earlier this week and put it in the brine last night..Plan on pulling it from brine tonight, rinsing it and putting in fridge to dry out before smoking tomorrow.  Anyone have a good rub i can try?  I plan on using the Slaughterhouse injection and then Olive Oil rubbed on the skin.
