Need help with Smoking a brisket

You have received some great advice,And being a fellow smoker i must agree!

But, If you have the brisky ready to smoke, Go for it!

It will be a lesson learned, and who knows, It may come out great!

I am probably close to AL in age, If he could not take a little heat, he would not be a smoker. I bet he dishes it oit also.I can dish and I can take. But the main intent is to encourage the new smokers. Keep telling someone how difficult it is and they will never learn ( because they are scared to fail) I will bet a ten spot that it was not offensive to AL. If he does then( tough) but I have a ten spot.

Butch you have not been around here long enough to know we poke fun at each other all the time. I take no offense at any of it. I consider these guys my brothers & brothers trash talk all the time. We are all here to encourage the new guys as much as we can, Everyone here is trying to get better at this hobby, no matter what level you are at there is always something new to learn.

I Agree with what the old guy above said.

We agree with you Butch, but you have to learn when we are kidding too.

We never actually get nasty.

We weren't really trying to scare someone out of trying a brisket for their first smoke just suggesting something a little more forgiving to learn the ins and outs of the whole process. A lot of new smokers get excited and go out and spend a bunch of money on meat and when it doesn't come out quite like they expected, possibly even having to toss the food in the trash, they get discouraged and may even think this is not for them. We are here to encourage and help when we can. We are all Brothers and Sisters on this site and just like to have a little fun with each other. I don't know how close in age Al and Bear are to me but I'll be 52 this Summer and I know we share the same passion for BBQ and Humor.

As Rich would say "Its all good my Friend"!
 
Yeah... I hate to see all the craigslist adds in my area for used smokers (usually ECB's), where people say they used it once or twice couldn't get the results they wanted and are now just getting rid of the smoker because it's to hard to get good BBQ.... *sigh*

I truely do not mean to discourage anybody from smoking a brisket, but starting with a brisket right out the gate is like learning to drive by jumping into Formula 1 car and expecting to win the race - you will be able to get the car to move, but the results will not be what you had in mind. That is why we usually encourage folks to start with somthing simpler and learn how their smoker runs (each one runs differant), then when they feel like they have the ability to sustain the low and slow temps evenly over 16+ hrs. go for the brisket.
 
I thought that most took my posting as kidding and poking fun at AL as to say hey get your feet wet. Try that Brisket, it is not the end of the world, if it is TOOOOOO Dry,cook another one.  WE all learn from our mistakes. I am here to learn and share and most of all enjoy this site!! Lets see some smoke and food.

Welcome to SMF. A brisket is a big undertaking. I waited a while and read many posts and asked many questions before embarking on that journey. Your a brave one ki11. Good luck. It could be a 20 hour smoke. Al has a great sense of humor and he's a hell of a smoker. Yet easy to rib. Someone should stick up for ya Al.
