After many failed attempts I'm looking for a proven venison recipe. Tried a couple different ones and just not flavorful. I've tried spicing these up alittle but then the flavor becomes confusing, probably because I don't know what I'm doing.
One thing I've noticed, most recipes I'm using are for pork. Being that I'm using pork/venison, I'm wondering if the flavor is being lost in the stronger taste of venison vs. the milder pork????? Maybe just decrease the quantity of meat from say 25lb to 20lb????
So, what I'm looking for is a flavorful venison sausage, one that you have personally made/had. It can be brats, Italian, whatever, just something no overly complicated and something that goes on the grill w/ a cold beer in the summer......
