Need a brisket rub and mop for the 4th

If any of you pitmasters out there care to share your favorite rub and mop for brisket, I'm all eyes. I have one sitting in the fridge and plan to smoke it on the 4th. I think I have the cooking down, just looking for the rub that will make people say, "Darn that is the best brisket I have ever had!".

Here is an all purpose dry rub.

3/4 cup paprika
1/4 cup ground black pepper
1/4 cup salt
1/4 cup granulated sugar
2 tablespoons chili powder
2 tablespoons garlic powder
2 tablespoons onion powder
2 teaspoons cayenne
Mix the spices thoroughly in a bowl. Store covered in a cool, dark pantry.
Makes about 2 cups.

And here is a basting/BBQ sauce. Called Maple BBQ Sauce

3/4 cup maple syrup
2 tablespoons chili sauce
2 tablespoons cider vinegar
1-1/2 tablespoons chopped onions
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon black pepper
Combine all ingredients and brush on all sides of meat. This is enough to cover approximately 3 pounds of beef, pork or poultry. Broil, grill or bake; basting frequently with sauce.

for an excellent rub, buy jeff's rub recipe. for an excellent "bbq" sauce, his sauce recipe is the best. i use them on everything.
for a mop for beef, i use a 6-oz can of apple juice, a few splashes of worcestershire sauce, a bit of EVOO or vegetable oil, and maybe a little beer. i quit mopping my briskets, and they are still juicy.
remember, it has to rest for a couple of hours once it is off the pit, before you cut into it. that way the juices redistribute back throughout the brisket.
 
I use the same thing as a mop, but I use a spray bottle instead.
50/50 mixture apple juice & water, worchestire sauce, & EVOO.
I use the store bought Fiesta brisket rub. I need to try Jeff's rub, I heard it was mighty good.
 
well, i use a squirt bottle, or a spray bottle sometimes too. i use mostly fiesta spices. i have never tried their rubs. i will always use jeff's rub- on everything. you cannot go wrong buying the two recipes. i know it sounds steep ($18.95 for 2 recipes), but once you taste them, you won't believe the results.
 
I use equal parts beef broth and Shiner Bock beer. It works for me. I don't mop until about the fourth hour so the bark does get washed off.
 
hot diggety damnit boy - yer cookin' w/ shiner- ya need to say yer from texas son - don't be ashamed. shiner is the only beer i know where in yer own state ya get charged import prices fer a beer that just keeps ya regular.
 
You guys are cracking me up. Serisouly though, thanks for the suggestions. The thing is there are about 100 great ways to do a brisket, it is almost impossible to pick just one.

And for those of you have not tried Jeff's rub and sauce, people are telling the truth. It is very good stuff. Yes, it is a bit expensive, but it helps operate this great forum too. I have used it now on chix, fattys, and ribs and it is hard to beat.
