My WSM Arrived Today

My new 18.5" WSM arrived today! I ordered it from AimToFind.com on Tuesday and it made it here in 2 days. It was $239.99 there, the best price I could find this week.

Based on a lot of research, the 18.5" should be perfect for me. If I have a very large group I plan to cook 2 days in a row. That should not happen very often.

I plan to do my first smoke Saturday. As I am new to smoking, this will be my first smoke ever, I am considering a pork butt; what do you think for just starting out?

Walt congrats!! Is this also cause of Chixosm thread? Anywho for that first smoke all I will recommened to you is to NOT set a time for people to show & start eating. You never know how long a butt may go? Start very early & if you finish early it will hold in a cooler.

Good idea on the pork butt. The first 1-3 smokes on the WSM run a bit high, so dont worry too much about that. Pork Butts are forgiving this way, I couldnt get my WSM below 260 the first time I used it (and first time with charcoal). After that is was super easy.
