Well I got the rib done and I am VERY happy with it

The family loved it. Just a little EVO and salt pepper and garlic and 5 hours in a 225* smoker with a pan of beef broth and onion below. My new Maverick worked great!!!

I am very happy with my first Prime smoke!!!!!!!!

Congrats on a great looking prime rib roast. It's nice to read how someone really enjoyed some smoked meat that had the basic spices. Points to you.
 
Now thats a thing of beauty for sure. I like it but I like them alittle more towards the 120-125 mark for mine. But this one is yours.

great job on the rib roast!!! kudos to you on keeping the seasoning simple. 135 would be about the upper limet as foiling and resting will continue its climb upwards some. sure looks like some great eats. thanks for sharing the pics, great xmas feast of beast!!!

but the rest of the family has to eat as well SOOOOO I will suffer with a med rare if I have to

. Even tho it was overcooked by my standards it was still a great piece of meat!!!!!
