  1. I have been a BBQ fan for a long time. This Christmas, my wife bought me an MES and I smoked my first pork butt the weekend after Christmas using some tips I read here. I live in southwest Virginia, but just moved here from Nashville, TN. I grew up in south Georgia. Consequently, my barbecue tastes are all over the place but I don't like sweet sauce.

    Looking forward to more smoked meat adventures and learning more and more techniques and tips.

    I am in South Georgia (Twin City) and I agree about the sweet BBQ sauce. My great uncle Doug had a BBQ restaurant, his grandson has the business now, and I know how to make his original sauce. Ain't no sugar in it. And you know it's got to be good if it's been made the same way for over 60 years and the restaurant is still in business. I think I posted the recipe here somewhere.

    In any case, welcome to the forum, and where in South Georgia did you grow up?
  5. I have a sauce recipe I've cobbled together from some other recipes and it has some sugar in it, and ketchup, but it doesn't taste sweet really. I have continued to lessen or remove the sweeter elements the last few times I make it. I think it gets better but I imagine there'll be a point where it's too spicy or bitter and I'll have to come back with some brown sugar to it.

    There's a place near me in Christiansburg, VA called Due South BBQ that has a "Sweet Brown" sauce that is almost the color of chocolate and tastes like candy. It's not my thing. Here in Blacksburg, VA, there's a place called Bull and Bones that is a brewery that serves BBQ and they make their own root beer which they use as a base for a BBQ sauce. I think it's inedible but other people rave about it.

    I'm from Albany and still have some folks there but I've been gone from there a good while. I've got some family in Vidalia also which is much closer to you. I don't get back too much though I'd like to move back to south Georgia once my kid is gone off to college assuming I could find work down there. Not a lot of software development being done in south Georgia.

    Post it and you will probably get 10 replies with 11 different answers. That is
    because their are so many different ways to make great Q...

  7. You might try adding more vinegar and let if cook down a little more
