Really nice!  I've had my eye on this for quite awhile.  Just moved and sold my sheet metal smoker so maybe it's time.  Can you publish the basic dimensions of the fire box and smoker box (inside and/or outside)?

Nice smoker!!  New to SMF and reading everyone's comments and reviews.  Learned alot from all of you and thanks!!  I built a similiar smoker and used it for the first time last weekend.  My first time making and smoking sausage in 20 years since moving to Australia from Pennsylvania.  Trying to remember myself plus teaching the wife.....a real challenge.  Good taste but need alot of practice.

that looks great.  I am in the process of building something similar.  I am using electric elements and parts canibalized from an oven.  great idea on the concrete backer board for the "HOT" areas.  I will have to consider that in my build.  also great thought on the cookie cooler racks.  I am goind to try and find some of those for my jerky.  I am curious why you didn't put a pipe on top with a damper though?  in putting together my plan I thought that would be best for draft, or am I wrong?

I was wondering if the cookie racks are alumnium or steel??

If alumnium how do you clean them up ??

Last question where did you buy yours??

Thanks Joe Rickerson

I know this is an old thread, but I had a question regarding the build and materials. I'm planning this build right now and will be using OSB for the build along with 2x2 posts. Does this sound ok?

Or what about something like this?

It's listed as hardwood plywood and would be for lining the inside and outside. I'll squish some insulation in between and it will all be framed with 2x2's.

1/4" is a little thin, when I did mine, I didn't use anything less than 1/2" and 2x4 posts, you will find you need the rigidity or it will twist some and the doors will not open/close or seal properly.

Looks good to my.... I had a neighbor that made a cold smoker out of 1/4".... used it for probably 15 years.... drank Wild Turkey and took all day to smoke fish.... I learned a lot for him..

Thanks Dave. That's reassuring. I believe if I add a couple cross braces that will help protect against over warping too. I'm going to be ripping the element out of my Old Smokey and using it in this thing also. I won't have any issues getting up to temp, especially since this will be an insulated box.

If you think the element puts out too much heat, you can always add a dimmer switch to the element and reduce the wattage output... I have done that to my MES 30 and it is a great addition.... controls the heat output like the knob on a gas burner....

I'm going to put together a PID controller for the smoker once it's all put together for temp control. I will be doing a good amount of sausage smoking in it, so I will need the additional control.
