Did my first 2 pork butts this weekend... It was a much shorter smoke than I had expected, after reading some of the threads here. Threw the butts in at 11:30ish, each with a different rub (one with Jeff's rub and the other with another recipe). The smaller one finished up around 8 and the larger one around 10. Here they are pre-rub, 14.8 lbs total weight: And here they are at the 100 degree mark. Check out the smoke coming off those bad boys! Here's one of them at 165 degrees, right before foiling: And finally, the finished product: The color on my camera phone does NOT do this pulled pork justice. It was actually more of a pinkish color and looked much more appetizing than the picture above. I really need to get a digital camera, but it's the best I can do for now! The tray you see above was brought to my office at about 1:30 this afternoon, and right now (at 2:15), it's gone! Rave reviews from my co-workers. After the last batch of ribs and the pulled pork today, I am now the most popular person in the office! I've just been recruited to smoke a bunch of food for the holiday office party. I used SoFlaQuer's finishing sauce, and it turned out absolutely melt-in-your-mouth delicious. Rep points to SoFlaQuer for the sauce! Overall, a great smoke, and the Pats won to top off the day!
