My wife is starting to call me the night smoker... This time I stayed relatively sober and did not over sleep (results much better then my first brisket). Started the the pork butt around 1am after applying a little homemade rub. Similar to Jeffs but I add some of my own chipotle powder. The smoker held at a steady 225 and I used a mix of Bourbon barrel and mesquite pellets in my AMAZ-N Pellet thingy. Around 8am the internal temp hit around 185 so I wrapped it in foil and added a little sparkling apple cider. I finished it this way until the butt got to 205. Pulled apart like a dream. The juice was so good I actually caught myself drinking out of the bowl. Any who. Here are a few pics. Hope you enjoy.... Happy Smoking, Smokin - K
