Whats going to be your sear machine?
 
One of my favorites for tri tip is to make French dips. Smokey Au jus, grilled onions pepper jack cheese and fresh slices of tomato, yumm!

Beer Bacon Brussel sprouts are a good side. Smoker roaster veggies garlic mashers, asparagus, green beans all good options.

. I have to say this is the worst cut of tri tip I have ever seen. It was cooked to a IT of 135°. The flavor was spot on but It was tough. I am going to blame the cow

. Maybe that is why the price was so low. Don't get me wrong, it was still a deal. Heck I can't buy burger for that. I hope the rest of the case is more tender. If not, I will still be eating good

 Side note: I have a grinder and know how to use it! No cow is to tough for the grinder

If the next one is like this I will run it thew the slicer and do just that. I really like Frech dips.

Bummer on the tenderness!!!! Hopefully you sliced against the grain. That makes the world if difference with tri tip. If it was still tough, then it's got to be the cow!!!hooefully the rest are better. If not grind it up and start making burgers! All except those few for whole tri tip jerky!
