Take a look at Bear's sticks and logs post. This is the second batch I have made using his recipes. I gave them a little tweak. But pretty close. Last time I used casings for Most of them. i was trying to use a 3/8" tube. It wasn't showing me much love so I went to casings. The flavor and texture of the naked sticks was much better. Bear gave me some pointers. I used a larger tube and a second set of hands. it worked a lot better.

I have seen Bear's posts and that what was giving me the impetus. But it great to see someone else do the same project with their own twists. I am really grateful for the advice on the 3/4 inch tube. I had thought of using a smaller tube but will not now.

Yeah, I told David 3/4", because anything smaller won't hold together without a skin on.

And I had Mrs Bear crank the stuffer for the extra hands. Don't know who David's extra hands are.

I will ask She Who Must Be Obeyed to help. It will take some pleading though. She isn't fond of my sausage stuffing projects. She suggests I make a mess.

My wife was catching as it came out of the stuffer. I'd slide the rack as much as I could. My wife shakes real bad due to her anti-rejection meds.

One thing to keep in mind is to keep everything as cold as possable. If it starts to warm up it falls apart. if you break one. Just toss it in the next run and go on.

I need to get a couple of more Qmats from Amazen products. They sure do make things better.

I thought about calling them "Naked snake sticks" or the other choice was dog loggs. I figured that would be hard to find in the searh bar.

Red, Thanks for the kind words. I told you when I bought the smoker. I didn't know if it was going to be mine or my buddies. Well it's mine. He has used it a few times. It has had a workout this week. I did bacon earlier this week.

I didn't have any mats when I made them with the stuffer, but when I mounted my stuffer, I mounted it on a leftover block of Butcher Block Counter Top, and I double nutted it, so I could slide wax paper under it. Makes it a lot easier to bring them out of the stuffer.

Very nice!  Now, I'm going to have to make some of these.  I had made the unstuffed beef logs and they were great.  Time to try some sticks - you have inspired me!

Have any of you tried to make these with a Jerky Cannon?  I used to make Jerky sticks with that years ago and haven't used it in a while, but is seems like it would be good for this.

Thanks for the kind words. I can't see why a jerky cannon wouldn't work. If it is hard to get it to come out. Add a little water or any other liquid. take a look at Bear's snack stick  thread. he rolls them by hand.

I used to give the inside of the cannon and tube a light spray with cooking spray before use, and never had problems getting the beef to slide out.  I'll go ahead and make some with a 1/2 inch tube on the cannon and let you all know how it comes out.

These pics should show how we did it.

With that rubber stuff under it, it won't slide around at all, and that heavy little piece of Butcher block counter top will never be tipped.

Having been a cabinet maker for over 20 years, I get gun shy about clamping on my beveled wood edge counter top.

Even the rubber footed squeeze clamps can be slid off a little (operator error), instead of carefully removed, and screw up your edging. This way---No clamping needed.

We didn't use wing-nuts, but all you have to do to remove the whole thing is remove the top 4 nuts.

I used Stainless Steel bolts, nuts, and washers. Counterbored the bottom of the butcher block, so the bolt heads don't touch the counter top.

The bolts will stay right in place for when you put it back on after washing. Just drop it on & spin the 4 nuts.


Side View--Note space under, for sliding any kind of paper you might want to drop the sausage on:

David, Fantastic looking snack sticks. Reading through this I couldn't figure out how you got them to look as good as you did.  Now I get it. Got to give this a try.
