Mothers day smoked rib roast

    [​IMG]My wife requested rib roast for mothers day, so who was I to argue?  The roast came from my aunt and uncles farm in NE.[​IMG]Red wine based marinade.[​IMG][​IMG]

     Pulled out of the MES at 135 degrees.[​IMG]

    [​IMG]

    Rested and served with ChefJJ's au jus!

    That must have been Awesome because that looks like a Prime Grade cut, tons of marbling! I prefer the Chuck end like that it is fattier and  has so much more flavor than the lean Loin end. Hope you liked the Au Jus...JJ
