More Slimmy Jimmy Sticks

    My grand daughter is going to be down from PA for a week. So i need to get her loaded up with goodies to take back north. Goodies for my neighbor up there to.

    Using up some SM mix.

    Couple of question Nepas.

    Do you heat to a IT of the sticks, go by time, color or just done enough to know?  I have made a couple of batches and cooled them down in ice water and then hung overnight to dry.  Is there a formula or recommended time to bloom, which kinda goes back to the first question since most meats continues to cook a few degrees are you taking them out a bit earlier than if you used a ice bath?

    Not sure I got the questions in the right order but how they make sense.
