More Cast Iron

Well I pulled the trigger on another d.o. and skillet. As if I needed them....and I did! They should be at my place when I get home next Saturday. I tried a 10" skillet with lid made by camp chef this time. I have read some good things about them here. I ordered a Lodge 12" d.o. from Target and the price was MUCH better than the Lodge site. I guess while I am smoking Sunday I will also fire up the grill and season the new toys. Might even make a cobbler of some kind. It has been a long hitch this time and I need some smoke around me. Reading the forum over here is the only thing that keeps me going. Thanks to you all!!!

Dutch oven cobbler nothing better I have a chocolate depression cake I make in the dutch oven its real good. I know everyone has there own way to season new cast iron and no one is wrong thought I would through my method in. I boil water in a new oven along with some fresh prairie hay or sweetgrass boil it for a few minutes (got this from an old chuckwagon cook). Then dry the pot and make popcorn in it a couple times before you cook in it. I do this occasionaly with all my cast iron even my skillets and Chinese woks just to make sure they stay well seasoned.
 
trapper, I had heard of that before but it is kinda the wrong season for frsh cut hay.

So I guess I will just use vegtable oil and git er done. That cake sure sounds interesting!!
 
Chocolate depression cake
Ingredients:
3 cups flour
2 cups sugar
pinch salt
2 teaspoons baking soda
10 level tablespoons unsweetened cocoa
2 teaspoons vanilla
3/4 cup salad oil
2 tablespoons vinegar
2 cups cold water
Preparation:
Sift dry ingredients into a large mixing bowl. Add remaining ingredients and mix with a large spoon until smooth. Spoon into a greased and floured 13x9x2-inch baking pan. Bake at 350° for 30 minutes. Frost with your favorite frosting.
I line my Dutch oven with foil you will have to use your Dutch oven experience to get the cooking time down I haven’t made this since last summer and I cant remember how long it took I made it in a Lodge deep 12'
 
I agree I was roaming the web this morning I ran across a blogspot for a homebrewer. He had a post about his homemade bacon experiment. He had a fresh belly and rubbed it with kosher salt,maple syrup and brown sugar kept it in the fridge for 4 days called it cured and smoked it over a Brinkman bullet chrcoal burner. I very politley reccomended he use some cure salt or if hes using salt at least do it Virginian style. Scary thing was he has a lot of followers who are going to try the same thing.
 
Congrats on the new cast iron! Amazon is a good place to buy sometimes, too.

I haven't done much experimenting with my Dutchies lately but spring is here now so I'm sure I'll get started soon. Gotta play with the smoker this year, too!
 
My last dutch oven cookout was for our boy scout troop last year. The meal was chuckwagon stew,fried potatoes/onions,biscuits, and chocolate cake. while the scouts were out doing some trash cleanup for community service I found a large downed cottonwood tree covered with oyster mushrooms so they were added to the meal floured and deep fried. No campouts coming up real soon may have to haul my iron out to the vacant lot behind my apartment and build a fire.
 
I know what you mean about building a fire. My wife thinks I am crazy because I will build a fire at night when it is warm out. There is just something about sitting out back with a cold brew staring into a fire. I know I have solved the worlds problems once or twice doing this.

OK, been gone a while but I am glad to be back and see everyone is doing good. I did not receive my 10" skillet until last week....and I have been overseas for 3 weeks already.

Go figure!! I did receive the DO, got it seasoned but due to unforseen circimstances I never got to use it. Maybe this trip home. I guess I don't need to purchase anymore CI for now.

CampingWorld has a nice set of cast iron pots w/lifter and griddle pan. I think I saw this for about $50 in their store a couple years ago.
Set includes a 2 qt. Sauce Pan, 6 qt. Dutch Oven with bail handle,12” Skillet and pot lifter. The 20”L x 9”W Griddle is ribbed on one side for broiling, and smooth on the other side, for pancakes, eggs, and more. Also included are carrying cases
 
If you are ever in the area, the Lodge manufacturing plant is in South Pittsburg, TN about halfway between Cahttanooga and Nashville. They have a store there and last time I visited they sold "seconds"... huge boxes of all the different things they make, some with obvious flaws, most you really have to inspect to find anything wrong with them all at great discounts. If you go, there is a little diner just as you get into town...my sister works there and makes a great peach cobbler!!
