More bacon wrapped chicken

Today I did more of Jeff's bacon wrapped chicken recipe. This time I did both chicken thighs and breasts. Cut them into smaller chunks, marinated them in some oil and Jeff's rub overnight. Ran out of bacon so the remainder chicken (upper tray) was simply skewered together. Bottom tray has breasts wrapped on the left and thighs on the right.

90 minutes of smoking at 250* using pecan and hickory in my Masterbuilt gasser, I mopped each skewer with some of Jeff's sauce. Smoked another 30 minutes until I reached an IT of 165*. AMNTS at the bottom under the burner.

Thanks all.  It was fun.   Next time....more bacon!   Sure glad I use a drip pan when doing all that bacon.

Looks delicious! I have somewhat of a twist on a chicken fatty in the fridge waiting to go on the smoker later today. Nothing like chicken and bacon!!
